This is just the ticket for a special, yet quick and easy dinner! I'm including a whole menu just perfect for a birthday or anniversay dinner at home. Choose a good cut of prime rib and put the beef in your oven before leaving for work and prepare for a pleasant surprise when you come home!
Busy Mom's Special Prime Rib Dinner Menu
Caesar Salad
Romaine lettuce, chopped
Iceberg lettuce, chopped
croutons
parmesan cheese
Toss together the lettuce, croutons and cheese and serve with the yummy Mom's Special Dressing.
Mom's Special Dressing
4 eggs
4 anchovies
1 clove garlic
1 c light veg oil
1 tbsp lemon juice
Place the eggs, anchovies and garlic in a blender and blend until smooth. Slowly pour in the oil; dressing will thicken as you pour. Add the lemon juice and stir. Pour on salad. Makes about 2 cups.

5 lbs prime rib
Preheat oven to 500F. Put beef in roasting pan in oven and bake for 7 minutes for Medium rare. Reduce heat to the lowest setting and let cook for 8-10 hours until you come home from work. Serves about 10.
