Easy Southwest Soup Recipe

You'll love the ease of this yummy family soup recipe. You can trade the corn bread for corn chips or corn tortillas. With the weather getting cooler here, I made it yesterday and my family ate it up!

2 lbs ground beef
1 large onion, chopped
3 - 16 oz cans ranch style beans
1 - 10 oz can Ro-Tel Tomatoes with green chilies
2 - 10 oz cans minestrone soup
1 - 16 oz can beef broth
shredded cheese
corn bread

Brown ground beef with onion in saucepan, stirring until ground beef is crumbly; drain. Add beans, tomatoes, soup and beef broth; mix well. Simmer for 45 minutes. Serve with shredded cheese and corn bread. Serves 8-10 hungry peeps.
