Broccoli and Spicy Shrimp Dinner Recipe

Serves 4

Ingredients:

¼ cup chicken broth
½ cup water
1 tbsp cornstarch
2 tbsp hoisin sauce
1 tbsp oyster sauce
2 tsp soy sauce
1 tbsp vegetable oil
¾ lb fresh or frozen and thawed medium shrimp, peeled and deveined
1 garlic clove, minced
1-2 tsp chili puree (depending on your taste buds)
2 tsp fresh ginger, grated
1 ½ cups broccoli flowerets
1 medium red bell pepper, cut into fine strips
4 green onions, cut into small pieces
1/3 cup peanuts (optional)

Instructions:

In a bowl, combine, chicken broth, cornstarch, hoisin sauce, water, oyster sauce, soy sauce and chilli puree.

Heat oil in a large skillet or wok. Add shrimp, ginger and garlic and stir-fry for about 1 minute. Add the vegetables and fry until the shrimp are done (i.e. pink and firm). Stir in the chicken broth mixture, bring to a quick boil and, while stirring constantly, cook for a further minute. Sprinkle with the peanuts and serve immediately over hot rice or rice noodles.
