1 tbsp olive oil
½ cup shredded cheese (of your choice)
2 tbsp Parmesan cheese, grated
½ lb white fish fillets
1 tomato, chopped
2 tbsp onion, finely chopped
Salt and pepper
Pour olive oil in an 8" glass baking dish. Place fish fillets in dish and coat both sides with the olive oil. Top with onion and tomato and salt and pepper. Cover the baking dish with plastic wrap and cook in the microwave for about 3 minutes or until the fish flakes easily with a fork. Sprinkle with the cheeses and cover. Allow the dish to stand for about 3 minutes before unwrapping.
