Leftover Roast Beef Sandwiches

Serves 4 - 6

Ingredients:
2 medium onions, thinly sliced
1 medium red bell pepper, sliced
2 tbsp butter
½ lb mushrooms, sliced
1 lb cooked roast beef, thinly sliced
6 bread rolls (such as sub sandwich rolls), cut in half
6 slices mozzarella cheese or other favorite cheese

Instructions:
Preheat oven to 350 degrees Fahrenheit.

In a large frying pan, melt the butter and fry the onions, pepper and mushrooms until tender. Divide the roast beef amongst the bread rolls and top with the mushroom/pepper mixture. Top with a slice of cheese and the other half of the bread roll.

Place the bread rolls on a baking sheet and cover with foil. Bake in the preheated oven for about 15 minutes.
